Over the past year of being parents far away from family, date night has gone out the window. Todd and I have gotten into a bad habit of putting Theo in bed and climbing into our own bed to watch TV, search Instagram, read, or other activities that don't involve any interaction. We used to love to cook together, but when we had Theo we needed one person on the baby while the other cooked. So, I decided that this weekend we should have a date night in making a delicious dinner, and it was SO fun!
On Saturday, I ran to the store and got all of the supplies and Todd picked up some flowers for me and a bottle of sparkling cider. I wanted to make something different and delicious that didn't take hours to prepare since we wouldn't be starting dinner until after Theo went down. I LOVE the Bride and Groom First and Forever Cookbook! It's recently become a favorite. I remember when I first got married I had zero desire to spend time in the kitchen slaving over tricky meals. Over the past few years of marriage, I have developed a love of cooking and now that I have a larger kitchen, I enjoy the satisfaction of nailing a new recipe.
I made the pasta and pesto shrimp dish with using their homemade pesto sauce recipe. Both recipes are found in the Bride and Groom First and Forever Cookbook. Nothing strengthens a marriage like de-veining shrimp together! Seriously though, gross.
I also used the Bride and Groom Cookbook's recipe for homemade croutons to add to a green salad tossed in a light balsamic vinaigrette. I also bought a fresh baguette and topped it with fresh mozzarella, slices of tomato, and fresh basil. I love it fresh or toasted in the oven.
After dinner, we made delicious molten lava cakes! This recipe is perfect because it's quick and easy. We topped the cakes with vanilla ice cream and this homemade salted caramel sauce. The recipe is for four cakes, but I only had three dishes and it worked just fine.
We had a fun night laughing and talking and sipping sparkling cider. Date nights can still be fun even if you're stuck at home with a baby. What's your favorite thing to do with your spouse? Tell me in the comments below.
